Grandma's Chicken Casserole

This is an old family favorite I thought I'd share...we love it!

1 c. chopped celery
2 Tbl. butter
2 c. cooked chicken
2 c. cooked rice
2 cans cream of chicken soup
sprinkle of pepper
2 Tbl. soy sauce
1 c. chicken broth
1 small can chow mein noodles (I buy chowmein noodles in a bag and measure out 2 c.)

Saute celery in butter. Add all other ingredients except noodles and mix. Simmer about 10 minutes. Pour into 9 x 13 inch casserole dish. Sprinkle on noodles just before baking.
Bake at 350 degrees for about 20 minutes.

  4. This looks delicious and reminds me of an old recipe my grandmother used to make. I am going to have to find that and see how similar it is. I know she didn't have soy sauce in it and seems like she had pimientos and maybe hard boiled eggs. I don't know. Anyway, yours looks great! I saw this on Let's Do Lunch.
